Black Bean Tacos


This is quick weekday recipe when you are in mood for something different. Great vegetarian option with lots of veggies.





Ingredients


3 Taco Shells ( I like the Trader Joe's) (Hard or soft)
1 Diced tomato
1 diced small onion
1 cup of diced lettuce
1/4 cup of shredded Mexican cheese blend
3 tsp of sour cream
1/4 cup black beans + 1/4 cup refried beans
Hot Sauce ( I prefer TJ's Jalapeno Pepper Sauce)
Salt to taste
2 tsp Taco seasoning
1 tsp oil

Method
    1.    Mix the diced tomatoes, onions and add salt to taste.
    2.    Heat 1 tsp oil and add the taco seasoning. Add the black beans and refried beans. Add salt to taste. Cook for a few minutes.
    3.    Heat the taco shells for couple minutes in a toaster or a pan.
    4.    Start by putting a little of the beans mixture. Add the tomato-onion mixture
    5.    Add a little lettuce. Sprinkle some cheese. Add a dollop of sour cream.
    6.    Add some hot sauce based on your spice level.

Enjoy the crunchy/soft yummy tacos with some Margarita!!
